Grills are lighting up all over the country and the savory aroma of smoked food wafts through every neighborhood. Burgers are a staple of grilling season, and grill masters have plenty of latitude in what goes into their creations.

Even though beef is often the meat of choice when making burgers, any ground meat can be used in its place. In fact, leaner meats, like lamb, pork, or chicken, can help people stay on track as they try to eat healthily.

This recipe for Chicken Burgers with Kiwi Salsa from Rose Murray’s “125 Best Chicken Recipes” is sure to be a hit. To add even more variety to recipes, choose kaiser buns, focaccia buns, or pretzel buns instead of regular hamburger buns.

Chicken Burgers with Kiwi Salsa

For 6 persons

1 egg

1-1/4 pounds ground chicken

1/3 cup dry breadcrumbs

3 tablespoons of milk or cream

1/2 teaspoon of salt

1/4 pepper

6 toasted hamburger buns

In a bowl, beat the egg; mix chicken, breadcrumbs, milk, salt and pepper. Form six patties about 3/4 inch thick.

Place on grill and cook, turning once, for 10 minutes or until chicken is no longer pink inside. Place in buns; spoon over kiwi salsa (recipe follows).

Salsa with kiwi

Makes 1-1/2 cups

2 kiwis, peeled and diced

1/2 cup diced red onions

2 tablespoons fresh lime juice

2 teaspoons packed brown sugar

1/2 teaspoon dried oregano

In a small bowl, combine the kiwis, onions, lime juice, sugar and oregano.
