The new edition of Michelin gourmet restaurant guide presented on Wednesday added 17 “Michelin-starred” restaurants to Germany this year, bringing the total to a record high of 327.
Michelin’s German director Ralf Flinkenflügel said that restaurant closures during the coronavirus pandemic has given many chefs time to refine their cooking, experiment with creative dishes and “do much better”.
Flinkenflügel told German news agency DPA that the past year had been “incredibly difficult” for restaurateurs and that it was “really amazing how well they had everything under control”.
“It’s been a record year. It surprised us a lot,” he said.
“World-class” restaurants in Germany
Germany also added a new “three-star” restaurant in 2022, which is Michelin’s highest and most exclusive rating. The schanz.restaurant, located in the Wine Region from Rhineland-Palatinate near the Moselle, has become one of nine restaurants in Germany with three Michelin stars.
“The inspectors were of the opinion: that the cuisine here is absolutely world class,” wrote the Michelin Guide on Wednesday. “Owner and chef Thomas Schanz creates dishes rich in finesse, personality and expression.”
Other three-star restaurants in Germany are located in remote villages in Rhineland-Palatinate and neighboring Saarland. There is one on Lake Tegernsee in Bavaria, and one each in Berlin and Hamburg. The small Black Forest village of Baiersbronn has two three-star restaurants.
A total of 46 restaurants have moved up the ladder to achieve a “two-star” rating in 2022. A total of 31 new restaurants have claimed a “two-star” rating. single star.
The Michelin Guide, published by the French tire company as a travel guide since 1904, is considered one of the best culinary guides in the world.
According to the publisher, international inspectors visit restaurants anonymously to assess the food, which is the sole focus, rather than the ambience of a restaurant.
